“Doburoku” Ichi no Daku is made from Nikomaru table rice from Wakayama prefecture, known for having big and round kernels, with expansive texture and subtle sweetness. Doburoku is a simple brew where you enjoy the fermentation mash without separating any of the solids out. Revel in this nutritious beverage, which is the first of the series, also served at Heiwa Brewing Company’s doburoku bar in Kabutocho, Tokyo, which opened in 2022.
