A testament to terrific taste

Like most namazake, or unpasteurized sake, Shichi Hon Yari Namazake is a winter seasonal brew. It’s only sold immediately after fermentation to protect the freshness. This particular brew has an upbeat dryness accompanied by hints of tropical fruit, like papaya or banana. As with their other sake, Tomita Brewing Company uses a local rice, Tamazakae, to infuse their creations with a touch of local flavor. Be on the lookout for this one the next time it goes on sale.
