Shuhari is brewed in Kyoto Prefecture in the Kinki region.
Founded in 1791 in Fushimi Region known for their stable, quality water source, Matsumoto Brewing Company is currently run by the Matsumoto brothers—the master brewer Hidehiko and director Keisuke. The brewery, built in 1922, is designated as a National Heritage site, and serves a beautiful backdrop for the forward-thinking duo making unique sake for the new generation. Their interest in expressing the terroir from each plot in every bottle is breaking ground while building on tradition and knowledge of meticulous brewing. They also mature their sake at 23 degrees Fahrenheit to capture the freshness in their slightly effervescent sake.
