Fujioka Brewing Company
The current fifth generation owner Masaaki Fujioka studied in various regions before resurrecting the brewery in 2002, seven years after the sudden passing of his father, to keep the tradition alive. Founded in 1902, their brewery is the farthest east and upstream within the historic Fushimi region, blessed with the highest quality soft water with perfect abundance of minerals, in their opinion. His goal is to provide a moment of reprieve for sake drinkers where they feel as though they have cast their eyes on a calm and clear “blue sky,” hence the meaning of their brand name, Sookuu.
