Good things take time, and so it goes for Jozen Ginjo Pink. The sake is aged for two years at consistent low temperatures, which adds to its pink hue. Expect invigorating mineral notes that mix with ripe nectarine or peach flavors and fade into a soft, rice finish. When you sip you can almost hear the babbling stream that gifted the water for this sake. Indeed, the minerals in that stream water are what help bring together the sweet and savory flavors into a unified whole.
Jozen is brewed in Hokuriku region.
