Shichiken “Junmai Ginjo”

Yamanashi Prefecture

Tastes of wisdom

Crafted in a brewery located at the foot of the Japanese Alps where they use water from local springs to produce refreshing sake. Shichiken “Junmai Ginjo” is buoyant, with a creamy texture that floats gently over your palate. The vibrant spiced melon flavor bounces along with a dry touch to keep the whole drink evened out. You can really taste the soothing quality added by the use of pristine water in this one.

The water of Ojiro River, one of the 100 best sources of water in Japan, originates in the 9,000-feet Mt. Kaikoma. After it travels through the cleansing layers of granite then it enters the Daigahara area where it becomes even more pure under the clean air and severe cold winter. The water, air and natural features were the prime reasons why the founder, Ihei Kitahara, chose this region for brewing in the 18th century.
