Nanbu Bijin “Daiginjo” was given a gold medal in the “sake for wine glasses” category. So what’s the secret? The brewers use a special grade of Ginotome rice that is only found in Ninohe city, Iwate Prefecture. Then they polish it down by a whole 50%.
