Kawatsuru has a female toji master brewer, Miki Fujioka. The president also has two children, both girls, so the future president will be a woman as well. Kawatsuru is very popular in their hometown of Kagawa, and one of their most popular sakes is their “iriko-zake,” steeped with local sardines for drinking warm.
