Named after the famous Japanese sword, “Katana” Junmai Daiginjo cuts its own path in the sake world. It has a silvery color, perhaps part of the reason for the name, and a medium-dry body that still sports those well-loved fruit flavors. These are undercut with a suddenly almond-like finish. The intricacies of this sake make it a great friend of food, and should be paired with some sea-inspired cuisine for best results.
