Nara prefecture
An excellent example of barrel-aged, or taru sake. Taru sake usually has a yellow hue, but, by using carefully chosen, unprocessed sake, the brewers are able to produce an astounding clear taru sake. Aged in barrels made from the finest cedar, this sake holds an enchanting woody aroma and taste. Bottled, sealed and delivered without losing any purity.
Choryo is made in Nara prefecture in the Kinki region.

Choryo Brewing Company
Choryo Brewing Company is located in Koryo-cho town to the northwest of Nara, which is said to be the birthplace of sake. The town is surrounded by historical heritages: to the north lies Horyu-ji temple, a World Heritage site; to the south is Asuka-dera, the first Buddhism temple in Japan; and Omiwa Jinja, to the east, is a shrine dedicated to the God of Sake. The brewer’s dedication and special attention to rice, water, people, and sake brewing is a direct reflection of the brewery’s motto, “shōdō mukyūkyoku”, which translates “self-satisfaction shall be avoided for one can always better themselves.”
