Brewed in Hiroshima, the birthplace of ginjo sake, known for remarkably soft water that requires expert skill to use in sake production. Once mastered, it enables a highly controlled, precise fermentation resulting in vibrant fruit aromas. This Junmai Ginjo is bottled without charcoal fining, keeping all the flavor intact.

Make a thousand improvements.” Imada Brewing Company lives by these words said by Senzaburo Miura, a local legend who invented the “soft water brewing method.” These days, Imada Brewing Company is one of the few breweries with a female brewmaster, President Miho Imada. She was selected for the BBC 100 Women 2020. Imada Brewing Company is also well known for reviving and using a native Hiroshima sake rice called Hattanso for the first time in around 100 years. They’ve been growing it ever since and using it to brew great sake.
This is on of my favorites at my local sushi house. Absolutely love this brew. Unfortunately the last bottle I received from Tippsy was not the same flavor profile. I'm suspecting that the bottle spoiled during shipping. I would love to have an affordable supply of this brand, but shipping alcohol comes with risks, and sometimes you get a bad bottle. such a shame for such a lovely sake.
Slight floral notes, incredible with fresh seafood.
We have never had quality Sake before and “Moon on the Water” came highly recommended to pair with briny St. John’s oysters on the half shell. Absolutely delicious. Subtle but multi layered. Try drinking from the oyster shell.
Perfect flavor combination
Delicious. Absolutely delicious. It has a wonderful pineapple taste with a hint of violet and honey towards the finish. The body is really smooth and is perfect for a warm day.
Love it! I especially like the hint of pineapple that goes with every sip. It isn't overpowering. Easy to drink on its own.
