Ancient tradition is strong with this brew as it uses a fune press which takes days of careful and skillful labor, but results in a soft, smooth sake. After a first taste you might find notes of melon and white pepper that give this sake a slight zing.

Founded in 1939, the Fuji Brewing Company is managed by the 3rd generation Imaoka family in the town of Izumo. They are a firm believer of the traditional brewing method, only using old-fashioned rice steamers, wooden tanks and hand-made koji yeast. The town is famous for its shrine, Izumo Taisha, built in the eighth century.
