Shimane prefecture
Izumo Fuji “Shimane Local” greets you with the welcoming aroma of white, spring flowers, which compliments the gentle rice flavor. Ancient tradition is strong with this brew as it uses a fune press which takes days of careful and skillful labor, but results in a soft, smooth sake. After a first taste you might find notes of melon and white pepper that give this sake a slight zing.
Izumo Fuji is made in Shimane prefecture in the Chugoku region.

Founded in 1939, the Fuji Brewing Company is managed by the 3rd generation Imaoka family in the town of Izumo. They are a firm believer of the traditional brewing method, only using old-fashioned rice steamers, wooden tanks and hand-made koji yeast. The town is famous for its shrine, Izumo Taisha, built in the eighth century.
