This savory sake is inspired by local legends of Niigata’s annual fox-bride festival. Local lore tells of mysterious lights that appeared on nearby Mount Kirin in the distant past, which are claimed to be the lanterns carried in the fox-bride procession. With a 50% polishing rate, this sake could technically qualify as a daiginjo, but the savory notes and food pairing versatility identify more with the style expected from ginjo.

The president of Kaetsu Brewing Company, Dr. Shunichi Sato, is a professor of sake and is one of the most highly regarded sake experts in the country. Dr. Sato and his wife Yoshiko run the business together, and both come from sake brewing families on both their parents’ sides; so together they represent four legacies of sake brewing expertise. With their combined knowledge, they’ve established the brewery in Niigata prefecture, an area renowned for its wonderful rice and crystalline waters.
