Saiya Brewing Company established in 1902 is located at the foothills of iconic Mt. Chokai in Akita Prefecture. Their master brewer Toichi Takahashi led the brewery to receive countless accolades since 1989, and is a highly regarded sake brewer awarded by the Emperor. Their brewing method shows utmost respect to nature by using all in-house cultured yeast and carefully creating a superior environment for the microorganisms to produce their honest sake. Their signature style is sake that has a gentle rising texture on your palate called fukumi without a strong aroma, which requires a masterful skill to achieve.
