Like a fresh dew during sunrise

Brewed in the same way with the same ingredients as Pearls of Simplicity but with a touch of distilled alcohol to open up aromatics and lighten the overall impact. Konteki means “dew drops of the earth” while Higashiyama (the brewery name) translates to “eastern hill.“ Brewery workers have been known to start their days watching the sun rise over the mountains until the dew drops glisten as if they were the Tears of Dawn.

Higashiyama Brewing Company

Higashiyama Brewing Company is one of the smallest breweries in Kyoto’s Fushimi ward, making only 400 koku. The well-respected rice farmer Masayasu Tanaka grows rice for the brewery. He is famous for growing some of Japan’s best quality “Yamadanishiki” rice, considered the pinnacle of premium sake rice. The Konteki brand exclusively uses 100% organic rice.

Started this elegant, small-batch (I think) daiginjo with dinner (scratch-made ramen noodles with pork belly and my AnyBones Broth), with which it paired beautifully, then continued drinking it with our guests late into the night. This is a unique sake that tastes to me very slightly of anise. A nice bright flavor that is easy to drink.

This is quite simply the sake of all sakes. This is the sake that got me into the game. Before this, sake was something I could take or leave, but after one sip of this, I was changed forever.

It was so incredibly smooth it was like drinking juice. Taste was incredible and it went so well with Poached Salmon with Teriyaki Onions.

Excellent flavor, fine delivery and a neat bottle to top it all off Tears of Dawn tasted just like I remember. Chilled momentarily in the snow and it was perfect.
