Fukui prefecture
Ginko-bai litterally means plum with elegant aroma. Its elegant sweetness while striking a perfect balance with its sourness cleanses your palate after a bite of any rich flavored food. This is for someone that didn't like umeshu's unique rich sweetness. The unique method to slowly extract juice from ripe fresh "Fukui" plum and mix with Junmai sake, makes this clean crisp and gentle sweetness possible. Not on the rocks, but just enjoy it straight, slightly chilled.

My favorite Plum Sake. Not too sweet.
Very pleasant plum flavor but a touch too sweet.
This is strictly for dessert. Sweet and rich with a thick cloying mouthfeel
I loved this cold, and with a mild dish. It's pleasant and refreshing.
Very nice with fruity tones would be nice with sushi
a bit too sweet to me.
This umeshu is so juicy and I love drinking it with something spicy. I don't prefer so sweet sweet umeshu, but this is just perfect with sweetness and sourness.
