Hakkaisan Brewery Company was founded in 1922 in the foothills of Mount Hakkai, in an area with snow accumulating over 10 feet at times. The snowmelt water is naturally filtered by the mountain, providing water for the rice fields and for the elegant sake they produce. Their signature Niigata style is known as “tanrei karakuchi,” which is crisp, clean and dry, achieved by slow, low-temperature fermentation. They only use handmade “koji” and produce in small batches, and their guiding principle is to produce sake of the highest quality that pairs well with food.
I’ve never been really keen on champagne, has always been way too sweet for me. This has given me a nice bubbly alternative!
Awa is an amazing refreshing sparkling sake that feels so clean on the tongue. I love Hakkaisan sake in general and this sparkling sake is just so universally appealing and a worthy substitute for sparkling wine.
Absolutely incredible sparkling sake. It's a bit pricey but perfect for a special occasion.

So good, great celebration sake to raise a toast . Find bubbles, delicate, slightly sweet, great pairing with white fish as well.
As it hits your palate it makes you wonder what's going on in your mouth but it soon becomes that very recognizable sake taste with the bonus of fermentation. Quite a unique experience specially for a sake but totally worth trying at least once! We had it with sushi and it complemented the food quite well. Could also be great as an aperitif or after dinner drink.

Very enjoyable and easy to drink! I wouldn't recommend this as a first sake, but one if you already enjoy the taste and aroma of sake and want to try something different.
