Ginko-bai litterally means plum with elegant aroma. Its elegant sweetness while striking a perfect balance with its sourness cleanses your palate after a bite of any rich flavored food. This is for someone that didn't like umeshu's unique rich sweetness. The unique method to slowly extract juice from ripe fresh "Fukui" plum and mix with Junmai sake, makes this clean crisp and gentle sweetness possible. Not on the rocks, but just enjoy it straight, slightly chilled.
Ginkobai is made in Fukui prefecture in the Hokuriku region.

Ippongi comes from Zen language meaning “supreme truth, a state that achieves the greatest knowledge.” The history of the brewery goes back to 1902. It is located in Fukui prefecture beneath the Mount Haku, the best location for sake brewing with clean water and beautiful rice fields. Their famous “Denshin” brand is brewed differently with seasonality. It literally means “heart-to-heart” because the brewers believe the magic of this sake can help people connect and communicate from the heart.
