Dedication and hard work pay off, and this sake is proof. It took five years of testing, tasting and innovating to finally perfect Nito “Yamadanishiki 55,” but the result is well worth the effort! This sake balances the primary flavor of umami, undercurrents of sweet tangerine juice and a subtle tannin-like shibumi aftertaste. Each sip is like a journey through a botanical garden, with new surprises at each turn.
Nito is made in Aichi prefecture in the Chubu region.

The brewery consists of just four people brewing sake with their heart, soul and happiness. The brewery has been around since 1690, and their brand Nito meaning “two hares” goes after two different flavor profiles often thought unattainable in one sake. With access to the magnificent water of the Yahagi River and carefully sourced rice from all over the country, they may be small, but they are mighty.
