The identity of this brewery is shaped by its local surroundings, or what wine folks would call terroir. Hakubanishiki Brewing Company is based at the foot of Japan’s Northern Alps in Omachi, Nagano prefecture. At 700 meters above sea level, they rely on the cold mountain climate and clean, soft water to brew their sake. All sake rice is grown within 7 kilometers of the brewery, using eco-friendly methods certified under Japan’s Eco Farmer system. Their small brewing team is dedicated to crafting quality sake that captures the essence of their hometown.
