This sake is "umakuchi," which is a perfect balance between sweet and dry with layers of umami. The Yamadanishiki used for this sake was grown right outside of the brewery, about ten paces by foot. With juicy grapefruit and grassy aromas, this sake is perfect for sauvignon blanc drinkers.

Kawatsuru has a female “Toji” master brewer, Miki Fujioka. The president also has two children, both girls, so the future president will be a woman as well. Kawatsuru is very popular in their hometown of Kagawa, and one of their most popular sakes is their "iriko-zake," steeped with local sardines for drinking warm.
