Kyoto prefecture
The word “gold” in the name is in there for good reason. This brew won gold in the daiginjo class at The Fine Sake Awards Japan 2019 and gold in the Yamadanishiki class at Kuramaster 2020. The brewers slowly and carefully age this sake at 32°F for six months to give it a full flavor of juicy cantaloupe with a balanced umami that all culminates in a sharp, enticing aftertaste.
Shinsei is made in Kyoto prefecture in the Kinki region.

Over 300 years ago, Yamamoto Honke established their brewery in this old capital city Kyoto and started to brew finest sake in the area. Burned to the ground during the modern Japan’s most important battle of “Fushimi Toba” which resulted in the defeat of the last Shogun’s armies, the brewery was quickly rebuilt by the support of locals in the same year. They use one of the best natural waters in Japan which according to the myth, magically appeared a long time ago when a wizard with white chrysanthemums helped the people suffering from a draught. The calligraphy for the “Shinsei” brand was given by a famous artist Tessai Tomioka as a wedding gift for the eighth generation Genbee Yamamoto.
