The Noguchi Naohiko Sake Institute opened in 2017 to immortalize the techniques of Master Brewer Noguchi, a legendary sake maker hailed as “the God of Sake Brewing.” A brewer for more than 70 years, Noguchi is famous for reviving the yamahai brewing method. In 2006, he was recognised as a Modern Master Craftsman by the Japanese Ministry of Health, Labour and Welfare, and in 2008, was awarded the Medal of Honor with Yellow Ribbon by the Japanese government. Located in Komatsu, Ishikawa prefecture, the institute brews with subsoil water from the sacred Mount Hakusan, and is dedicated to preserving Noguchi’s vision and wisdom.
