Ofuku Brewing Company

The brewery was originally founded as Kishi Goro Shoten in 1897 by a man named Goro Kishi. Later, Goro Seki, a son-in-law of the family, studied fermentation and brewing at Tokyo Institute of Technology, and revolutionized sake making through tenacious research. He established innovative techniques such as soft water brewing and the “sokujo-moto” method, which uses lactic acid to prevent spoilage. In 1949, the brewery was renamed Ofuku, but they still operate under the founder’s wish to create happiness through sake. Their style is rich and mellow with a refined umami, which they achieve through minimal filtration and charcoal fining.
