Kurosawa Brewing Company
Founded in 1858, Kurosawa Brewing Company has access to two underground wells fed by the Chikuma River. This water is soft and tasty, so much so that Kurosawa uses it for both brewing and to sell as mineral water. The brewers focus on the traditional kimoto method of brewing. They use this labor-intensive process to produce 60% of their sake. Despite the additional work and added time, Kurosawa finds this method their preferred way to get deep, full-bodied sake with rich flavor.
