Their master brewer Toichi Takahashi led the brewery to receive countless accolades since 1989, and is a highly regarded sake brewer awarded by the Emperor. Their brewing method shows utmost respect to nature by using all in-house cultured yeast and carefully creating a superior environment for the microorganisms to produce their honest sake. Their signature style is sake that has a gentle rising texture on your palate called fukumi without a strong aroma, which requires a masterful skill to achieve.
