Asahi Brewing Company (Dassai)

Asahi Brewing Company (Dassai)

Yamaguchi Prefecture

An almost-bankrupt small brewery with 200-year history with declining sales abandons mass-produced brand "Asahi Fuji" and re-focus all its company-resources to create the best “Daiginjo” grade sake. Dassai brand achieved the highest milling rate of rice and rebuilt the perception for sake both in Japan and in the world. The aromatic notes and delicate flavors of Dassai are what made a use of wine glass common for drinking sake.
