Hiroshima prefecture
The “seaside” of the Seto Interisland Sea that Fukucho sits on is famous for lemons and limes; The female brewer, Miho Imada, uses a little white koji to produce citric acid to mimic these notes. Made through secondary fermentation with no dosage, so the cloudiness is from the yeast and sugar used, not nigori.
Fukucho is made in Hiroshima prefecture in the Chugoku region.

Miho Imada, one of the few female toji brewmasters, is also the 5th generation president of her brewery. She is very proud of her region of Akitsu, Hiroshima, and works hard to create a geographical identity for this area within the world of sake.
