This sake uses a secondary fermentation process to produce those buoyant bubbles that deliver bursts of flavor to your palette. While many bubbly drinks, like Champagne, add sugar after filtering, Nanbu Bijin AWA lets the sake remain true to itself. This prevents the sake from being overly sweet and lets the umami and dry qualities shine through.
