Asahi-Shuzo Sake Brewing Co., Ltd. (Kubota) was established in 1830 with the motto “quality first.” Brewing good sake comes down to making good rice. Not only do they focus on sourcing high quality sake rice, they dedicate their time and effort in their labs to continuously increase the quality of their harvest. Their efforts do not stop there. In order to help sustain the environment, they implemented the ISO14000 system with environmental sustainability. They also participate in various activities to preserve their natural surroundings. Additionally, they hold tea ceremonies, concerts and cultural events for the local community. The goal is to make a fun, sustainable and ultimately enjoyable environment with sake.

This is one of my favorites. Reminds me of the Japanese melon flavor. Sweet and dry, but not overly sweet.

I really liked this sake. It started with the subtle fragrance of either apple or pear or maybe a bit of both. Enjoyed chilled, it was light, crisp, and had a taste, that while difficult to describe, I found reminiscent of a Granny Smith apple, sweet with a little bit of a tart bite. Simply delicious! As this is a lower priced junmai diaginjo, it is a fantastic entry point to explore this category or a way to enjoy it more frequently. This one is worth trying.

This is my favorite dry sake. There are other good dry sake to try as well but I always keep coming back to this one. When I want an acidic, less fruity, less floral sake that cuts through fattier or creamier foods, this is what I enjoy most.
