Daisekkei Brewing Company’s seasonal sake is always incredibly juicy. Using aromatic yeast, Daisekkei “Summer Light” doesn’t disappoint. This sake uses Hitogokochi rice from contract farms, polished in a special way called “henpei” to maximize the pure starch center. By carefully controlling the water ratio during fermentation and stopping fermentation at 13% ABV, they creatie a refreshing balance between umami, bright acidity, lightness and a dry finish.
