“Aki,” which means fall, is a seasonal release called “hiyaoroshi,” made by taking Denshin “Ine” in its undiluted form, and storing it in a cool place over the summer. The ample umami that develops, along with a tropical aroma and a bold, dry finish, pairs well with rich proteins with sauce, and hearty fall vegetables. Enjoy it over crushed ice or even cut with soda, and relish fall’s bounty.
