Omachi rice and fragrant yeast from Yamagata prefecture create a symphony of seasonal flavors: Dried apple, stewed cherry and pear at the front, hazelnut and warm spices in the middle, and a clean finish at the end. Even with all that flavor swirling about, this junmai ginjo remains as elegant as gently falling autumn leaves.
