“Shiboritate” translates to “freshly squeezed,” and that’s exactly the vibe this sake gives off! Made using four different yeasts and Gohyakumangoku rice, “KID” Shiboritate is a seasonal sake that offers bright, crisp flavors that retain their charm due to being completely unpasteurized. You’ll find some bright umami floating amidst the flavor that’ll keep you coming back for more. And that softness? It comes from the brewery’s velvety soft water from an area called Koyasan.
Heiwa is made in Wakayama prefecture in the Kinki region.

1928 is when a sake-loving gentleman who married into the family established the brewery where it was originally a temple. After the hiatus during World War II, the company was renamed “Heiwa” meaning peace and harmony. When the current fourth generation owner Norimasa Yamamoto came back from working in Tokyo in 2004, he switched the brewery’s focus from mass-produced sake to carefully made premium sake. The KID line is intended to express the local nature, including their pristine water. And yes, they want to nurture both their sake and young talents as if you would nurture your own kid.
