How do you evolve without compromising who you are? “Assemblage 2” presented IWA founder and maker Richard Geoffroy with this challenge. Both the art of sake making and assemblage are a complex set of choices, such as which types of rice and yeasts to use, and in what proportions. This second iteration delivers lighter umami with heightened floral aromatics, and like an impressionist painting, simultaneously achieves subtlety and vibrance.
