A seasonal sake released for the Harvest Moon in fall, Kubota “Tokugetsu” is brewed using Yuki no Sei rice that is polished way down to 28%. The polishing process takes three days and nights, leaving a rice grain that looks like a full moon. Notes of soft rice powder and a touch of anise blend into the region’s signature dry, clean style. The perfect sake for an evening under the stars.
Kubota is made in Niigata prefecture in the Hokuriku region.

In order to help sustain the environment, they implemented the ISO14000 system with environmental sustainability. They also participate in various activities to preserve their natural surroundings. Additionally, they hold tea ceremonies, concerts and cultural events for the local community. The goal is to make a fun, sustainable and ultimately enjoyable environment with sake.
