When they say classic, they don’t mean decades — they mean centuries. This sake represents “Edo-gaeri,” meaning returning to Edo-period techniques (1603-1868). “Classic” is made using the original strain of heirloom Kamenoo rice. Utilizing only the ambient yeast natural to the brewery cultivates an aroma of ripe banana and a distinctive acidity. Drink it with food that balances freshness and umami, like seafood salad or pasta with basil.
