Ode to history and natural ingredients

This brewery is on a mission to renew centuries-old sake-making traditions while using the most natural ingredients. This sake is brewed using the labor-intensive kimoto method, and utilizes the ambient yeast of the brewery. It’s made with the original, ancient strain of Kamenoo rice, organically farmed. Only 10% of the grain is milled, leaving the natural rice flavor intact. The mash ferments in a “kioke,” a large, traditional wooden vat.
