With an 88% rice polishing ratio — close to that of table rice — the Hyogo Kitanishiki rice they use leaves more proteins, minerals and vitamins to be broken down into umami. This ageable product deepens in color by the year. It’s mead-like, with notes of gooseberry, jasmine flowers and honey. The recommended pairing is ice cream.
