Founded in 1790 during the Edo era, Yamatogawa Brewing Company has been making sake over nine generations using pure water sourced from Iide Mountain. From early on, they have had a keen interest in using chemical-free fertilizers and reduced pesticides for their sake rice, and have been working closely with contract farmers in addition to having their own farm since 2007. They feel that their intimate understanding of the water, soil and climate, together with their legacy of sake making—and the courage to incorporate modern technology all in harmony—is what makes their soft, supple sake quintessentially theirs.
