“75” refers to the rice polishing ratio, and Aiyama is the name of the sake rice—they were careful not to over polish, to respect the soft mouthfeel that Aiyama sake rice offers. Ripe grape aromas and a signature heavier plump mouthfeel with thick bones can be enjoyed in this seasonal release, just once pasteurized in the spring and carefully matured for the fall release.
Shichida is made in Saga prefecture in the Kyushu region.

Tenzan Brewing Company
Tenzan Brewing Company was founded in 1875 when a husband and wife team with a flour and noodle business purchased a brewery that was going under. Currently the sixth generation brewery owner Kensuke Shichida constantly challenges themselves to evolve together with the current trend of sake. That said, their focus from the beginning has been to maximize quality of their sake using the natural bounty that the Ogi City provides. It is really fun to watch the collaboration they do within the tight knit brewing community—and Mr. Shichida’s leadership in Japan and also internationally is worthy of note.
