“75” refers to the rice polishing ratio, and Aiyama is the name of the sake rice. The brewers were careful not to over polish, to respect the soft mouthfeel that Aiyama sake rice offers. Ripe grape aromas, along with Shichida’s signature weighty, plump mouthfeel, can be enjoyed in this seasonal release, which was pasteurized just once in the spring and carefully matured for the fall.
