Tucked away at the tip of Ishikawa’s Noto Peninsula, Sogen Brewing Company has existed in the rural town of Suzu since 1768. Founded by the Hatakeyama samurai clan, they are of noble descent and were even visited by the crown prince in 2018. With a focus on being food friendly and staying true to their heritage, they are driven by the powerful flavors of rice and umami and make sake for the fishermen and farmers in the area.
