Honke Matsuura is a brewery committed to using rice sourced from their home prefecture of Tokushima to create lively sake. This limited-time “nama” (unpasteurized sake), collected immediately after pressing, lives up to that promise, delivering a refreshingly fruity taste with a soft acidity. Subtle rice flavor comes through in the aftertaste for a touch of umami. It’s a gentler, lower-ABV sake compared to some of their other “genshu” (undiluted sake).
