Using Yamadanishiki rice polished to 35% rice polishing ratio, this sake is fun, bright, delicate and slightly sweet. Notes of bright yellow flowers will grace your nose first, with a hint of mango juiciness and rice confectionery powder on the palate. It has some lean mineral notes with an astringency to balance it out, with a pleasant, long finish that tells us it’s brewed under excellent supervision.
