Champagne cellar master Régis Camus has partnered with Dewazakura Sake Brewery to craft an assemblage that celebrates ginjo sake. The Yamagata prefecture brewery is famous for having kick-started the ginjo trend with their 1980 release, Dewazakura “Oka” Cherry Bouquet. HEAVENSAKE blends various batches of the brewery’s sake in such a way that it plays into the brand’s elegant, smooth style. It pairs well with jamón Ibérico, salade Niçoise and seafood.
